Well... I think I created the most delicious pasta plate that the world has ever tasted.
It was amazing and it was all kind of thrown together by yours truly.
Here is the recipe so you can go home, eat it and then light candles to the food gods for letting me discover it. Also, be warned: you will probably gain a pound from eating it. Period.
There is no way around it. Embrace the fatness; it loves you.

Sun Dried Tomato Pesto Pasta

Half a box of Penne pasta
1 large chicken breasts, shredded
1 T EVOO
1/4 onion, chopped
1 t minced garlic
1/4 cup of butter
1 C milk
1 T Flour
1/2 C Parmesan Cheese
salt & pepper to taste
2 T sun dried tomato pesto

Prepare pasta by box instruction, drain, and put aside.
Boil chicken and shred or if you have rotisserie chicken on hand you can shred that. Put aside.
In a skillet, sautee onions in olive oil until soft.
Add garlic and butter and sautee until garlic is fragrant.
Combine flour with milk and then pour in mixture. Season with salt and pepper to taste.
Simmer until sauce thickens.
Add Parmesan Cheese and blend until melted.
Add pesto and Chicken until heated through, and pour over pasta.

Yeilds 4 Servings. I'm sure you could double the recipe and make plenty but we only 2 people in our household and don't like to see food go to waste.

HA. That was a good one. Like it would have lasted longer than 24 hours.
