Yummy Potato Wedges

The other night, we had veggie burgers.
What's so great about that?
Well, we paired them up with some DELICOUS potato wedges I made in a hot minute.



Potato Wedges

4 small russett potatoes
1/4 (or a little less) Cup Vegetable oil
salt
pepper
garlic powder
enough oil to fry in

Cut potatoes in half, then in wedges. Put them in a microwave-safe bowl. Pour oil in bowl and season with salt, pepper and garlic powder. Mix around and cover with plastic wrap. Microwave for 7-9 minutes until soft but not falling apart. Take potatoes out of bowl and let them cool on a cookie sheet for 5-10 minutes.

Warm oil in pan until about 340. Drop half of potaoes in and fry for 4-6 minutes or until goldern brown. Repeat with last half. once they are all done, season again with salt and pepper. ENjoy!

Microwaving the potatoes first helps get them soft without having to double fry them, which means its healthier and seasoning them before you fry them helps give them more flabor.

They were so good, James instantly asked when we were going to have them again.
